Hello there! My name is Halie and I've created this blog to account for my experiences while I attend the Culinary Institute of America in Hyde Park, NY for the next 4 years. I hope you enjoy reading about my life.

wowie okay it’s been 3 months since I’ve updated and i guess i really suck at this blogging thing because i still don’t know what to say

so it’s second semester now, I’m out of fundies and got through meats class and currently I’m in fish & seafood fabrication. Right now my classes are only 3 weeks long, so we go through them pretty fast.

Last weekend I got a job, I worked BOH at a school event, prepping and cooking food to be served. Thank God I was BOH and not FOH cause I didn’t have to talk to the public and it was a huge relief. So that was pretty fun, I worked about 23 hours or so total for 2 days at $10 an hour so I’m pretty happy about that.

Also, in case anyone hasn’t heard (family-wise) I got my externship all settled out- I’ll be working in Walt Disney World at Tony’s Town Square restaurant starting on June 2, till October 10th. So I’m REALLY excited about that, plus it’s a huge relief to have that all sorted out and not have to worry about it for the rest of the year.

Hmm, what else has been going on.. Nothing much really other than those things. Classes right now aren’t all that exciting and I really wish I was in a kitchen class right now, but I will be in 3 weeks so that’s alright. There isn’t really anything huge going on in my life other than the fact I got a new laptop so that’s awesome. I’ll try to sell my old one, it still works, it’s just kinda crappy and doesn’t charge well- the piece that the charger plugs into the computer is touchy and if you don’t hold still it will keep beeping at you, going in and out of a charge. I guess if anyone reading this is interested I’ll sell it for like $125 maybe, I guess if you’re a techie you could use it for parts or something, who knows.

So yeah, that’s college right now. I’ll try to update somewhat frequently, we’ll see.

I have Saturday classes tomorrow and it sucks because I don’t get to watch the 50th Anniversary of Doctor Who so let me just say that

Also, remember when I was like “wOW THE FOOD HERE IS S O GREAT!!11!!”??

i have been lied to. terribly lied to.

the food is the same thing every 3 weeks because of the block schedule. A La Carte has chicken with glazed beets. K-16 has undercooked burgers. Asias, Americas, and Mediterranean is usually good but I never wake up/get out of class in time to eat at any of those places so I’m always stuck with the other two.

Desserts are good though. I live for the free, unlimited desserts.

In terms of college itself, it’s good. I’m learning a lot in fundies and all my academic classes are pretty easy. I really miss my friends from back home though, and I can’t wait to spend every waking minute with them during winter break! Until then, I get to spend thanksgiving and my birthday probably by myself, eating hot pockets and ramen. (Because when there’s no classes, there’s no food, basically, and it’s stupid and dumb and nobody understands WHY we can’t just have a normal cafeteria like every other college). Except I do have class on my birthday. 7 hours of it. Until 8-ish at night, and then I don’t really have anyone to go out with or hang out with after class so, yeah, I’ll probably celebrate being 19 years old with a vanilla coke and HIMYM marathon. Fun stuff.

I don’t remember if this post had a point or was just going to be a vague update of how college is going. Hmm..

In the past three weeks I’ve made:

  • Consomme
  • Onion Soup
  • Lentil Soup
  • Potato Leek Soup
  • Fish Chowder
  • Mashed Potatoes (turns out I’ve been doing it wrong my whole life)

And I’ve actually been very proud of the outcome of all the above soups. and potatoes. It’s amazing how much I’ve learned in such little time of being here, and I look forward to what else there will be to learn in the future. (It also scares the heckie out of me though but shh). I can’t wait to go back home and show off my skills to my family!

Anyways, I don’t think there’s anything else to say, so. Until next time!

Dinner: Fried Chicken, Mashed Potatoes and Collard Greens and a Fried Oyster Po’Boy.

Went to another new kitchen today, Cuisines of the Americas. Also very good. Didn’t get a chance to actually try the Po’Boy though because I got full and started feeling sick so I just left, hence why i had no dessert as well.

today i think i’ve had the best meal i’ve had all week

for dinner i decided to eat somewhere new and go to one of the downstairs kitchens for a change. (also, it was the only open kitchen at the time and i wanted to eat and get out asap). So i had Roast Chicken with Mashed Potatoes, glazed Beets and Broccoli for dinner. The sides were a Chicken Consomme and Salad (i forget what kind). and then some of the students came out and started putting out desserts and you don’t have to swipe for those, you can just take them so I had creme brulee for dessert :D also this is the most i’ve eaten all week and now my stomach is happy so yes, good day.

(sorry for the lack of good quality pictures, i didn’t clean the camera lens on my phone which i have to do if i want them to turn out well)

I have arrived in New York.

I’m in Albany right now, in a very sketchy looking Super 8 motel room. There are bugs and spiders and I feel gross but it’s okay because it was the cheapest thing and we’re just here to sleep for the night.

We got here around 6 PM and drove to Poughkeepsie, got lost a bit, drove through my campus then ate at Applebees while we searched for a place to stay.

There were absolutely no affordable places in Poughkeepsie/Hyde Park so we decided to drive to Albany which was an hour and a half drive so that was fun. And we arrived here at midnight and checked in and that’s where I’m at now.

Note to self: change computer clock to east coast time, I won’t be needing west coast time for a while.

Alright, that’s it, that’s all I’ve got for today.

  • 11 days
  • 11 days
  • 11 days left
  • 11 DAYS LEFT

In case you haven’t noticed, only 11 days left until I leave for college!

Looking back at when I applied, I thought “Yes, October 22nd will be perfect because then I will get a long summer and plenty of time to spend with friends and won’t be rushed”

I regret that decision greatly. (I rarely regret decisions). I probably shouldn’t have picked such a late entry date, maybe because:

  1. all my friends have either already left for college or are back in school
  2. since all my friends are in school, i have nothing to do with my life except sit on the couch all day on the computer
  3. i finished a whole season of supernatural in one week whoops
  4. i’ll probably finish another 2 seasons by the time i finally leave for college
  5. i’m really tempted to just blow all my money on cosplay instead of save it for college

protip: if you have the option to choose an entry date, pick one in late august/early september. do not pick the october entry date. do. not.

in other news:

since my last blog update, which was what, 3-ish months ago? i worked on a cruise ship. let me briefly summarize that experience:

it sucked. like, really bad. another protip: do not work for american cruise lines because they will overwork and underpay you. i worked approximately 15 hour days. That’s 6AM-11PM. I had only one hour of a break in that whole day, plus meal breaks which were 30 minutes long each and were basically sitting down, eating, going back to work. I only got paid $35 a day, which i guess if you’re working salary, they can work you as much as they want so it’s totally legal. I quit after one week of working and came back home because i hated it so much. let me clarify something however, I DIDN’T QUIT BECAUSE THE WORK WAS TOO HARD. I didn’t mind dishwashing, I was perfectly capable and content with the job itself. I think that if the hours were better and maybe worth the pay i would have kept working, and i wish i could have kept working because i met some great people and got to see some really cool things. however, it didn’t work out that way.

Actually, when I got my paycheck I came out of that week with $900. Most of that is covered in tips, because on the ship all the employees are part of a tip pool, so i received about $600 in tips in that whole week. The only thing is that I actually got none of that money since:

  1. taxes
  2. uniform
  3. my plane ticket to get to the ship was taken out of my paycheck (i had previously agreed to this)

so yeah, that’s my summary of working on a cruise ship for a week. fun stuff.

i actually got a job at the fair when i got back home, and actually made money out of that so that’s a good thing.

thats it thats the update, i’ll update again, probably after i start classes!

Until next time,

Hello, friends, family, and whoever else are deciding to waste their time by reading about my horrendously boring life. (Seriously, why would you want to do that?)

I’m starting this blog because in October I will be leaving for college at the Culinary Institute of America in Hyde Park, NY. This blog will be a way for me to record and keep track of everything I go to in college. (I apologize in advance because I will probably forget about this blog in a week and not remember it until 3 months after classes start). Anyways, a lot of people in my family have been pestering me to have a blog while I’m in college and that’s what I’m doing so here ya go, hope you enjoy it, and I guess you’ll hear back from me again in 3-ish months when I actually am in school.
